Leaf lard Refrigeration 

Soft fat from around the kidneys and join of the pig. It lacks any real pork or meaty flavor, making it an excellent neutral flavored cooking fat with a high pression point, remarking that our lard is made exclusively from this soft fat as main ingredient.

Leaf lard is particularly prised by bakers for use in producing moist, flaky pie crusts

Lard has always been considered the premier fat for producing the best pastries. These days lard has an undeserved bad reputation. The fact is, it is a natural fat that has been eaten in many cultures, all over the world since the beginning of time. Lard is mostly monounsaturated fat and also has 10% polyunsaturated fatty acids. It is also a rich source of vitamin D.

Leaf lard is a premium lard, harvested from the kidneys of the pig and has a mild flavor. Chefs everywhere recognize the virtues of lard for baking and cooking. 

Unfortunately most lard available in grocery stores has been altered by hydrogenization and adulterated with preservatives. In order to we are specialized in pure lard, so is difficult to find. The only health building lard is produced by artisan and mechanized methods like us, which make pure lard that must be refrigerated or frozen for storage.
